Product Identity

The Crono-Varietal Story

This Cava is built on a single variety, Trepat, harvested twice — one week apart — and then completed with Garnatxa.

  • T1 (Trepat, harvest week 1): Less mature grapes. Microbial community less ecologically mature. The Pillar of Purity and Precision per Trepat2_es.pdf §3.1. Fermented reductively at 25–27°C; produces clean, fruit-forward base wine.
  • T2 (Trepat, harvest week 2): Same chemistry (21.2 °Bx, pH 3.5, TA 4 g/L) but different microbiome — a more ecologically complex population accumulated during the extra week of diurnal selection. The Pillar of Wild Complexity per §3.2. Cold-soaked 4–5 days at 8–10°C under CO₂; fermented cool at 22–24°C; aged 4–6 months sur lie fines.
  • Garnatxa (400 L): Brings body, glycerol, sun-ripe fruit, and the alcohol lift (~11.3% in the final blend) needed for a long-aging sparkling base.

This is temporal assemblage: two harvests of the same variety, in the same week, with different microbiology, unified in a 36-month méthode traditionnelle.

  • All three base components (T1 600 L, T2 800 L, Garnatxa 400 L) are acidified to pH 3.25 before blending
  • At pH 3.65–3.77 (current T1/T2), SO₂ addition would be chemically inefficient (mostly bound, little molecular-active) and would shock the lías needed for aging
  • The Escudo Ácido (Acid Shield) uses acid, not sulfur, as the spoilage-control tool
  • All tanks cooled to <8°C during acidification — cold is the second line of defense (Acetobacter metabolism halts at 8°C)

Claim: "Seven days of lías infusion, not three — full anaerobic control unlocks the time"

  • The standard instinct is to bottle at Day 2–3 after assemblage
  • The protocol extends this to up to 7 days of bâtonnage with inert gas (CO₂/N₂), provided strict anaerobiosis is maintained
  • At 0.65 g/L VA in the T2 component, Acetobacter is present but dormant at pH 3.25 and <8°C — they need oxygen to multiply, and the bottle (vs. tank) is perfectly anaerobic
  • The extra days allow Garnatxa and T2 lías to clean H₂S and build manoprotein texture

Sensory Profile

Intended: A wine of patience, integration, and temporal depth. The Crono-Varietal strategy produces a sparkling rosé that combines the floral precision of T1 with the autolytic texture and glycerol weight of T2, lifted by Garnatxa body. This is not a fruit-forward sparkling. It is a sparkling of mineral evolution.

  • Nose: Initial — wild strawberry, white flower, citrus zest (T1 contribution). With air — brioche, toasted almond, dried bread crust (autolytic signature at 36 months). Background — saline, chalk, a hint of flint
  • Palate: Fine persistent perlage. Medium body. Acidity present but not aggressive (the assemblage balances the components). A thread of tension runs from attack to finish. Glycerol weight from Garnatxa adds mid-palate presence
  • Body: Medium-full, focused, mineral-driven
  • Finish: Extraordinarily long — saline, flinty, with dried herb and bitter orange peel
