## The Crono-Varietal Story

This Cava is built on a **single variety, Trepat, harvested twice** — one week apart — and then completed with Garnatxa.

- **T1 (Trepat, harvest week 1):** Less mature grapes. Microbial community less ecologically mature. The **Pillar of Purity and Precision** per Trepat2_es.pdf §3.1. Fermented reductively at 25–27°C; produces clean, fruit-forward base wine.
- **T2 (Trepat, harvest week 2):** Same chemistry (21.2 °Bx, pH 3.5, TA 4 g/L) but **different microbiome** — a more ecologically complex population accumulated during the extra week of diurnal selection. The **Pillar of Wild Complexity** per §3.2. Cold-soaked 4–5 days at 8–10°C under CO₂; fermented cool at 22–24°C; aged 4–6 months sur lie fines.

**Intended:** A wine of patience, integration, and temporal depth. The Crono-Varietal strategy produces a sparkling rosé that combines the floral precision of T1 with the autolytic texture and glycerol weight of T2, lifted by Garnatxa body.
