Process Summary

Crown-capped bottle secondary fermentation → 36 months sur lattes at 12–14°C → remuage → dégorgement (glycol bath) → zero dosage → final cork and capsule.

Process Stages

Bottling under crown cap — tirage wine with EC1118 + sugar
Sur lattes — horizontal aging, 12–14°C, 36 months (4× Cava DO minimum)
Autolysis — progressive manoprotein release; reductive to mineral evolution
Remuage — bottles rotated to collect sediment in neck
Dégorgement — necks frozen in glycol bath; sediment plug expelled
Zero dosage — bottle topped with same disgorged wine (Brut Nature)
Final closure — cork and capsule; wire cage
Release — sensory and chemical analysis confirms Brut Nature profile
