1. Composition

1.1 The Crono-Varietal assemblage

The Cava is built on a single variety, Trepat, harvested twice — one week apart — and completed with Garnatxa. This is temporal engineering: two harvests of the same variety, in the same week, with different microbiology, designed to be unified in a 36-month méthode traditionnelle.

Garnatxa's pH 3.9 is the critical issue. It must be acidified to pH 3.25 before blending. The Acid Shield (Phase 0) is the protocol's universal response to this chemistry.

2. Fermentation — Process and Calendar

The Cava is the protocol's platform demonstration: three separately vinified components, united in a single assemblage, aged 36 months sur lattes, dégorged with zero dosage. The Five Levers of Control are coordinated across all three components, then applied to the assemblage, then to the bottle.

2.1 Phase 0 — Universal Acidification Triage (Día 0)

Process:

  1. Cool all tanks (T1 600 L, T2 800 L, Garnatxa 400 L) to <8°C. Cold is the second line of defense — at 8°C, *Acetobacter* metabolism halts.
  2. Acidify each component individually to pH 3.25 before any movement. The Acid Shield (Escudo Ácido) is the protocol's universal response to high-pH must.
  3. Tanks remain <8°C throughout acidification — preserving the indigenous microbiome.

Why pH 3.25 specifically here:

  • Garnatxa's natural pH 3.9 would otherwise raise the blend's pH dangerously.
  • At pH 3.25, the eventual 40 ppm SO₂ at tirage (if any) would be twice as effective per unit.
  • *Acetobacter* is suppressed; *Lactobacillus* is suppressed; indigenous *Saccharomyces* is unstressed.

Lever settings:

  • Time + Temperature: <8°C during acidification
  • pH/Oxygen: acid shield + cold suppression of bacterial metabolism

2.2 Phase 1 — Parallel Fermentations of T1, T2, Garnatxa (Day 1 to ~Day 14)

Process — Trepat T1 (Pillar of Purity, 600 L):

  1. Whole-cluster press (slow cycle, strict cuvée/taille separation)
  2. Fermentation in stainless steel at 25–27°C peak, daily gentle punch-down
  3. Indigenous *Saccharomyces* dominance within 48–72 hours (less mature skin microbiome establishes quickly)
  4. Press immediately after alcoholic fermentation complete (RS < 2 g/L)
  5. Malolactic fermentation in stainless steel
  6. Age 2–3 months in same vessel to retain freshness

Process — Trepat T2 (Pillar of Wild Complexity, 800 L):

  1. Whole-cluster press (slow cycle, strict cuvée/taille separation)
  2. 4–5 day cold soak at 8–10°C under CO₂ blanket — critical step that allows the more mature skin microbiome (non-*Saccharomyces*: Hanseniaspora, Lachancea, Candida) to proliferate before *Saccharomyces* takes over
  3. Temperature ramp slowly and naturally to 22–24°C peak (cooler than T1 — preserves volatile esters)
  4. Two gentle punch-downs per day during active fermentation
  5. Post-fermentation: 3–5 day short extended maceration, then press
  6. Age 4–6 months sur lie fines in concrete or neutral oak (microoxygenation permitted for tannin polymerization + manoprotein release)

Process — Garnatxa (400 L):

  1. Standard red fermentation (whole-cluster or destemmed per vintage decision)
  2. Indigenous yeast; moderate peak temperature
  3. Lías kept — healthy, high alcohol

Lever settings (per component):

  • Time: T1 short (3 weeks); T2 extended (4–5 days cold soak + 4–6 months lie fines); Garnatxa standard
  • Temperature: T1 25–27°C; T2 8–10°C soak then 22–24°C; Garnatxa moderate
  • Oxygen: T1 reductive; T2 reductive under CO₂ blanket during cold soak
  • Extraction: T1 daily punch-down; T2 two punch-downs per day; Garnatxa standard

2.3 Phase 2 — Assemblage and Bio-Integration (Día 1 after Phase 1)

Process:

  1. Garnatxa (400 L) — direct integration. Rack clear wine to the main assemblage tank. Pump lías in too (healthy, high alcohol — bring manoproteins).
  2. T1 (600 L) — smell-check selection. Smell T1 before any movement:
  • If rotten eggs (H₂S): Splash-rack into main assemblage tank (air fixes H₂S). Discard T1 lías (reductive off-aromas live in the lías).
  • If clean: Pump wine and lías to main assemblage tank.
  1. T2 (800 L) — critical step, NO splash. Rack clear T2 wine to main assemblage tank under a CO₂ or argon blanket. Harvest only the fine creamy top layer of T2 lías; discard the heavy bottom sludge (where the bacterial load concentrates). Pump the fine lías to the main tank.
  2. State: 1,800 L of wine + mixed lías in one tank at 8°C, pH 3.25.
  3. Bâtonnage with inert gas (CO₂/N₂) — never air. Gentle stirring keeps lías in suspension.

Lever settings:

  • Time: 24–72 hours minimum bio-integration window
  • Temperature: <8°C
  • Oxygen: master lever — strictly anaerobic. T2 transfer under CO₂ blanket is non-negotiable.

The 7-day option vs. the 3-day standard:

If anaerobiosis is guaranteed (CO₂ blanket, no O₂ ingress), the lías can integrate for up to 7 days before tirage. The extra days allow:

  • H₂S to be bound by lías
  • Mannoprotein texture to build
  • Aromatic integration of the three components

The protocol prefers 7 days when anaerobic control is strict. The Acetobacter clock: at 4°C and pH 3.25, even 7 days in a sealed tank does not give *Acetobacter* enough oxygen exposure to multiply significantly.

Safety trigger: if glue or vinegar (ethyl acetate) appears during the 7-day window, *Acetobacter* is waking. Abort and bottle immediately.

2.4 Phase 3 — Tirage (Día 2–7)

Process:

  1. Rack clear wine off settled lías (lías have done their work — discard).
  2. Prepare Liqueur de Tirage: sugar + EC1118 yeast (commercial, robust, pressure-tolerant, neutral — the "Navy SEALs" of yeast for guaranteed bottle fermentation under stress).
  3. Bottle immediately under crown cap.

Why EC1118 here (and only here):

The base wine has high alcohol and high acidity — a stressful environment. Indigenous yeast is already depleted (used during the parallel fermentations). EC1118 is robust enough to guarantee bubble formation in the bottle.

Lever settings:

  • Time: tirage immediately after assemblage
  • Vessel: crown cap sealed bottle (anaerobic by definition)

2.5 Phase 4 — 36 Months sur lattes

Process:

  1. Bottles placed horizontally (en rima) in cool, dark cellar at 12–14°C.
  2. Secondary fermentation completes in bottle over weeks; CO₂ trapped; pressure develops to 6.0 bar.
  3. Autolysis over 36 months: manoproteins, amino acids, glutathione released progressively.
  4. At 36 months: T1's reductive signature has evolved into flint/smoke mineral nobility. Trepat (light) and Garnatxa (heavy) are married.

Why 36 months (non-negotiable):

  • At 12 months, T1's reductive signature might still read as off
  • At 36 months, reductive off-aromas have evolved into "flint/smoke" mineral nobility through autolysis
  • Trepat (light) and Garnatxa (heavy) need the full 36 months to integrate — they will not marry earlier
  • 36 months is 4× the Cava DO minimum of 9 months

Lever setting — Time: the duration of lees contact is the protocol's signature lever for this wine.

2.6 Phase 5 — Remuage, Dégorgement, Zero Dosage (Month 36+)

Process:

  1. Remuage. Bottles rotated to collect yeast sediment in the neck.
  2. Dégorgement. Necks frozen in glycol bath; the frozen lees plug is expelled.
  3. Zero dosage (Brut Nature). Bottle topped with the same disgorged wine — no expedition liqueur.
  4. Final closure. Cork and capsule; cage for sparkling.

Lever setting — Vessel: the bottle is the final vessel.

6. Quality Profile Statement

The 2025 vintage Cava's chemistry is calibrated by the Acid Shield across all three components. The base wine is of excellent quality — the assemblage is stable, the components are integrated after 36 months of lees contact, and the residual sugar is zero (Brut Nature).

The Cava's story is not one of compensation for flaws. It is a story of calibration across three distinct sources:

  • T2 brings aromatic complexity, glycerol, and the wild-yeast signature from extended cold soak
