Target Sensory Profile: Ancestral — Método Alquímico
The Intention
What does "a single fermentation, sealed in time" mean for this wine?
We wanted to capture two things that the wine world treats as opposites: the vibrant primary fruit of a one-step ancestral fermentation and the depth, texture, and clarity of a long méthode traditionnelle. The decision was to let one fermentation do both — start it in the deposit, finish it in the bottle, then leave the bottle alone for a year and a half.
This is not a compromise. It is the alchemical move: the wine that comes out of the bottle has never known any vessel but the bottle.
Intended Sensory Expression
On the Nose
- Primary (from single fermentation): Wild strawberry, rose petal, white pepper, a marine-saline edge
- Secondary (from lees aging): Dried bread crust, a whisper of brioche, toasted almond — the autolytic signature, arriving with air
- Tertiary (from terroir + zero dosage): Limestone mineral, chalk, a saline thread that runs through everything
- Background: Nothing heavy. Nothing funky. No Brett, no barnyard.
Word for the nose: *alive and aged, simultaneously.*
On the Palate
- Entry: Fine, persistent perlage from a single fermentation. Not aggressive mousse — the bead is a thread, not a foam
- Acidity: High. Mouth-watering. TA 7.2 g/L drives a line of tension from front to back
- Texture: Translucent at first, then a creaminess emerges mid-palate from 9 months of manoprotein release
- Fruit: Wild strawberry and citrus, held in suspension rather than dominating
- Mineral: Salinity is the signature. The limestone is in the finish, not the attack
Word for the palate: *electric saline.*
The Finish
- Long. The acidity and the salinity are the last things you taste
- The autolytic texture softens the exit — it does not disappear, it recedes
- No warmth from alcohol (11.20 % vol is invisible)
- Brut Nature means there is no sugar to mask anything. Every flavor is accountable.
Word for the finish: *cliff edge that resolves into chalk.*
What This Wine Is NOT
This is not a typical Ancestral pet-nat. It is not cloudy, not funky, not divisive. It is not a standard Cava with dosage hiding structure.
This wine is:
- Clear — dégorgement produces crystalline clarity
- Pure — no Brettanomyces, no mousiness, no VA
- Precise — every phase was designed to protect the integrity of the single fermentation
- Honest — zero dosage means every molecule is accountable to the parcel, the vintage, the microbiome
Emotional Target
When you open this bottle on a spring evening, with raw fish or nothing at all, the wine should feel like the moment the wind changes on a coastal limestone hillside — the air shifts, and you can taste the change.
The tension is the point: youthful electric energy + aged texture depth. The two are not blended; they coexist in the same glass.

The Story Behind the Hybrid
The decision to call this the Método Alquímico is not branding. It is the acknowledgment that the wine contradicts the standard categories: it is not a pet-nat (too clear, too aged); it is not a Cava (no liqueur de tirage, no dosage); it is not a méthode traditionnelle red (Trepat is not a Champagne grape). It is a single continuous fermentation that uses the bottle as its final vessel.
This is the original sin and the original virtue: one fermentation, one decision tree, one wine. Everything else is blending or compromise.

Where a planning figure was superseded by the finished wine, the executed value is shown: nine months on lees, harvest pH 3.5, and residual sugar 6.7 g/L as measured by INCAVI (bulletin 185574). The analytical values for the other two 2025 wines remain estimates; no finished-wine analysis has been carried out on them.
